Cookie in a Brownie



This is a simple and delicious snack!

1 box of your favorite Brownie Mix
1 package tubed chocolate chip cookie dough

Preheat to 425. Mix brownie mix according to directions. Fill Muffin pan half way with mix, Drop a small rolled ball of cookie dough and slightly push down into center of brownie mix. Bake for approx 15 minutes, Enjoy!

Simple Salad with Italian Chicken


3 Thin Sliced Boneless Skinless Chicken Breasts
1/2 packet Dry Italian Salad Dressing
1 Cup Regular Zesty Italian Dressing
1 bag Shredded Iceberg Lettuce
1 Cup Shredded Cheddar Cheese
Croutons

In Crockpot, pour liquid dressing on bottom, place chicken in then sprinkle dry dressing on top. Cook on high for 1 1/2 hours. Pull out chicken, cut into small pieces, then put back in crockpot for another 1/2 hour on high.

In large bowl with lid; mix lettuce, and cheese and toss. We store whatever we don't eat in this bowl (don't mix dressing or chicken in leftover bowl, it will create soggy lettuce.).

Fix salad as you like.

We used 3 cheese ranch dressing, and cheese croutons. Very simple and delicious!

Italian Cream Cheese Chicken




4 Boneless Skinless Chicken Breasts
2 Tbsp. Butter
2 Tbsp. Dry Italian Dressing
1 Can Condensed Chicken Soup
8 oz Cream Cheese
1 Tbsp. Onion (Minced)


1. Brush Chicken with butter, lightly salt and pepper .
2. Set Chicken in Crock pot and sprinkle Dry Italian Dressing over chicken. 
3. Cook on low for 4 hours.
4. On stove top in small saucepan, melt and mix soup, cream cheese, and onion.
5. Pour over chicken and cook low for 2-4 hours depending on Crock Pot. Always check.

If you are going to freeze, cook fully to the end, and then freeze. Reheat in crock pot for 3-4 hours on low from frozen.

Chicken Parmesan Meatloaf



1 lb Ground Chicken or Turkey
1 Egg
1/4 C. Dry Bread Crumbs
2 Cloves Minced Garlic
1/2 tsp Oregano
1 Onion Chopped
1/2 Tsp. Salt
1/2 C. Grated Parmesan Cheese
1.2 C. Spaghetti Sauce
1/2 C. Italian shredded cheese


Preheat Oven to 350. Lightly Grease pan. In a large bowl, mix Chicken/Turkey, Egg, Oregano, Garlic, Bread Crumbs, Salt, and Parmesan Cheese. Lightly mix with hands without over handling (Meat will be tough if over handled). Place in pan and form into loaf. Top with Spaghetti Sauce. Cook 45-60 Minutes. Add Italian Cheese, Heat until cheese is melted.

Always check the thickest part of meatloaf to ensure it being fully cooked before serving.

This Recipe is a big hit here! We love meatloaf and I particularly love Chicken Parmesan so it was win win!
